Each year we have a tradition of eating corned beef and cabbage for dinner on St. Patrick's Day.
We've become rather fond of margaritas since moving to Texas. This is a little variation...I got the recipe off a package of Lime Jell-o. It's called, "Cool Layers." Notice how the bottom layer is transparent and the top is opaque (because the Cool-Whip rises to the top) Don't forget the green gummy bear!This is one of Steve's favorite dinners. We really missed having him with us.
Throughout the entire dinner, Lilly kept saying, "This is amazing!" Everyone had two helpings. I'm sure each one of us will be taking turns getting up in the night for a glass of water. Can't wait to do it again next year!

What a fun dinner! You are so clever, that margarita looks delicious!! We just had pancakes, eggs, and blueberry muffins...all died green. We miss you!! Can't wait until June!!
Yes, mom is right. They are the only ones who like cabbage! The margarita's look awesome. SO darn cute! We ate Lucky Charms for breakfast and pinched Ry. You have motivated me to do better next year!
I am very impressed, my picky kids wouldn't touch that meal with a 10 foot pole. They are more into the lucky charms and chocolate coins that the leprechauns leave around the house.
